With an emphasis on plant-based ingredients and locally sourced products, her Curitiba-based eatery stands out for its meticulous approach to gastronomy and sustainability. Manoella's passion extends well beyond the kitchen; she engages in community advocacy through native bee preservation, the Curitiba vegetable planting project Urban Gardens and her educational and social inclusion organisation Manu Buffara Institute.

This is a rare opportunity to revel in her vibrant, boundary-pushing Brazilian fare as she works with Ploós Executive Chef Peter Conistis to craft an unforgettable fine-dining experience. All set within the stunning action of Vivid Sydney's Light Walk, surrounded by installations and with the Harbour Bridge and Sydney Opera House in full, sparkling view.

Chef Manoella’s renowned restaurant, Manu, was the first restaurant helmed by a woman in Brazil to focus solely on a tasting menu and the recipient of the Flor de Caña Sustainable Restaurant Award 2023. Here, her commitment to sustainability and community engagement is second to none — 60% of Manu’s menu is plant-based and she personally knows each locally sourced ingredient and supplier she uses.

This deep sense of humanity and incredible attention to detail translates to the plate for Vivid Sydney where Manoella will serve intricate, elegant and unique dishes across her two-week Vivid Residence.
